Cook rice - start with at least 2 cups of raw rice and 1 teaspoon of salt- and cook as usual. (Bring 4 cups of salted water to a boil, Stir in 2 cups of raw rice. Cover. cut off stove burner and let sit for 20 minutes. Should be done. You can also cook rice in microwave with close to equal parts of rice and water.) In a large skillet, fry at least 1 pound of bulk sausage (or
sausage links cut into small pieces) along with one chopped onion until
sausage is crispy and onion is sauted. Stir cooked rice into the sausage and grease. Bebbe did NOT drain the grease - she stirred it into the rice - yummy but also "Heart Attack on a Plate"! Season with plenty of black pepper and salt as desired. Serve with green vegetables and sweet pickles and biscuits. |
