Aunt Ethel’s Caramel Frosting ( Bill Humphries Aunt) ½ cup butter cut into 5 or 6 pieces ( DO NOT use margarine – will not work) ½ cup milk 1 cup granulated sugar 1 cup (packed) brown sugar Put all ingredients into a 2 quart saucepan over medium heat stirring occasionally till it comes to a full boil. Bubbles should be across entire surface but if too hot it will boil over. Let it boil exactly 2 minutes 30 seconds. And sit off of heat. DO NOT sir while boiling. Let cool until you can touch pan. Butter will separate out – that’s ok. Beat with wooden spoon until mixture creams and gets to spreading consistency. If too soft, ad XXX confectioners sugar. If too still add milk.
