Cheese Straws

1/2 pound grated sharp cheese

1 1/2 cup plain flour

1 stick  (1/4 pound) butter (or oleo)

1/2 teaspoon salt

dash of red pepper & cayenne pepper to taste

  

Blend butter & cheese together - wash your hands good and do it by hand, or use pastry blender in your food processor.  sift flour, salt & pepper together.  Knead flour into cheese either by hand or in food processor.

  

Press into straws or daisies with cookie press.

  

Bake at 350 F for 10 to 12 minutes.  Cook on wire cookie rack - then store in a tin.   

 

( if you don't have a cookie press, roll into logs about the diameter of a quarter, refrigerate, then slice into 1/8 inch slices and bake to make cheese wafers. bake as above, checking to see if they are done after 8 minutes - cook until slightly browned.)

Great for a ladies tea party, wedding reception, drop-in, etc.  Good as an appetizer along with fresh fruit
