Country Green Beans

Ham Seasoned Green Beans

2 regular cans green beans (either whole, cut, or flat Italian Style)

1 small onion, chopped in 1/2 inch pieces

2 medium potatoes diced in 1/2 inch cubes

1/2 cup scraps of ham saved from a baked ham

1/2 cup essence (pan juices)of same baked ham    

Put canned beans (this can be done with fresh beans if your are lucky enough to find some good ones) in saucepan and turn on heat to medium low.  Chop up onion and cube potato ( do it fast - pieces can be any size you want) - add to beans in pot on stove.  Add ham scraps and essence - if you have a ham bone you can add this to pot too.  Bring to simmer, then turn heat down.  This is ready in 15 or 20 minutes - when onion and potato pieces are tender.

Both scrappy pieces of ham and pan essence of baked ham can be frozen for use as needed.  Let ham pan juices congeal in refrigerator, then cut into portion size for one pot of beans - freeze and pull out as needed.  I use sandwich zip lock bags to put just enough scrappy ham pieces and essence to flavor one pot.  Then put the collection of little zip lock bags into a bigger freezer bag.
