Diane's Brown Sugar Shortbread Cookies

Diane's Brown Sugar Shortbread Cookies
3/4 cup butter
1/2 cup brown sugar (packed)
1 3/4 cup all purpose flour (plain)
dash or salt
1/2 teaspoon vanilla.
 
   Knead butter and brown sugar together (fine to let little hands do this...or if you are on your own you can use mixer dough hook to mix).
Add flour (& dash of salt) a little at a time  and knead into the butter/brown sugar.  Add vanilla after about half of flour has been kneaded in - then knead in rest of flour.
 
   Roll out on floured surface ( about 1/4 inch to 1/2 inch thick) ...and cut as desired.  Girls had a GREAT time cutting out heart shaped cookies. 
    Alternate method to shape is to roll into pie shape (8 inch circle), flute edges, then cut with pizza cutter into wedges and bake.
 
   Bake in preheated 350 degree oven for 18 - 25 minutes (depends on how thick the dough is) until cookies are lightly browned.  Cool and wire rack - store in air-tight container   ...If there are any left to store!!  I hid a dozen cookies from the girls so Randy could taste them for desert after supper!! Needless to say...they are ALL GONE now.  We'll probably make these again while girls are here!!
