Fig Nut Bars
Filling
:l cup sugar
8 oz. fresh figs washed and stems removed, cut in half
1/2 cup water
1/2 cup chopped nuts (optional)
Combine sugar, figs, nuts, water in medium saucepan.
Heat to boiling, reduce, simmer 10 minutes or until thickened, stirring
often. (mixture will still be runny) Set aside to cool.
Crumb crust and topping:
l cup brown
sugar
1/2 cup
unsalted butter (or ½ to ¾
cup of canola oil- to get right consistency)
1/2 tsp.
salt
1/2 tsp. vanilla
2 1/4 cups
flour, divided
1 3/4 c. rolled oats
smidgen
of maple flavoring (l/4 tsp. or less)(optional)
Cream sugar,
butter (or canola oil) until light and fluffy. Add salt, vanilla and
maple flavoring and mix until blended. Stir in 1/3/4 cups flour and
the oats until well mixed and crumbly. Spread and pat 2/3 flour mixture
evenly on un-greased 9x13x2 in. pan. Spread filling evenly on top.
Add 1/2 cup flour to remaining
flour mixture. Crumble and spread all over top. Add bits of butter to
top of crust (approx. l or 2 tbsp) . Bake 350 degrees 25-30 min.
or until light brown. Allow to cool in pan and cut into bars. Makes
approx. 30 bars
