Mom's Chicken & Rice

The way I make it is to boil the chicken - whole or whatever pieces you want along with seasoning, onion, celery, salt/pepper// to use - then de-bone the chicken ( take it out of the pot, let it cool, and pick/cut the meat off the bone). 

Once the chicken pieces are out of the pot, then measure the broth, bring it to a boil and put the rice in  ( 2 cups of water/broth for 1 cup of rice).

Cover and cook the rice on low for about 20 minutes until rice is cooked. 

Add cut-up chicken and chopped boiled eggs to it. 

Stir...serve with sweet pickles, cole slaw, and green beans or brocolli or whatever.
