This is Randy's favorite with biscuits,
cornbread or pancakes!
1 peck pears (peel and grind) 1 cup of sugar for each cup of pear pulp 1 # 2 can crushed pineapple 1 big jar maraschino cherries, chopped Cook together in large, heavy saucepan over moderate hear until translucent and thickened. Stir often. DO NOT SCORCH!! (I usually end up with 10 cups of grated pears - using food processor grater - 10 cups of sugar is 5 pounds of sugar. My big heavy pot will allow me to cook up 20 cups of pears, 2 cans of crushed pineapple, 2 jars of chopped cherries and 10 pounds of sugar at a time - it is a really big pot! this takes the better part of the afternoon to peel, grate, and cook the pear honey, then put into jars.) Put in sterilized jelly jars and seal according to standard canning directions. |
