Potato Salad

Polly's Picnic Potato Salad

Quantities are approximate - use the good old taste test before you put in the refrigerator to chill.

Six Large Potatoes, boiled in salted water with skin on.  Drain and cool slightly. Pull off skins and dice.  

One medium onion minced.  

Two stalks celery chopped small.  

Dressing is:  

About one cup of Kraft Zesty Italian salad dressing with about one half teaspoon garlic powder stirred in.  Bring to boil and reduce about one third.  Pour hot over warm potatoes.  

If the potatoes are still dry, I add a little more of the Zesty dressing.     

Since there is no mayonnaise in this, it is a good choice to take for a picnic or covered dish dinner because it will stay safe to eat even at room temperature for a while. Polly brought this to the annual Pig Pickin and it was a real hit!
